White Chocolate and Macadamia Cookies



You can't beat the wonderful combination that is white chocolate and macadamia. So here's a cookie recipe that ticks all the boxes. I've adapted it from a few different places to come up with the perfect mixture. You can mix the chocolate in but I prefer if on top as this gives an even coverage and chocolate in every bite.

Makes 20-30 cookies

Ingredients:
  • 200g of butter
  • 1 cup of brown sugar
  • 1/2 cup of white sugar
  • 2 medium eggs
  • 1/2 teaspoon of vanilla
  • 1 + 2/3 cups of flour
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of salt
  • 1/2 cup of macadamias
  • 150g of white chocolate buttons

Method:
  • Preheat oven to 180 degrees Celsius
  • In a mixer, beat butter until creamy
  • Add both sugars gradually until mixture is light and fluffy
  • Add the egg and continue beating
  • Scrape down the sides of the mixture and add vanilla, beat again
  • On a low setting, gradually add the flour
  • Scrape down the sides and add the macadamias, make sure all ingredients are mixed
  • Line your trays with baking paper and add small balls of dough to the tray
  • Bake at 180 for 10-12 minutes or until done - use a skewer to poke through the center - if it comes out clean, your cookies are done.

Chocolate Topping
  • Melt white chocolate on a low heat over the stove or in the microwave
  • Once it is all melted, use a fork to flick the chocolate in a side to side motion
